Can I tow a prius v with this ? Towing a Prius V 2104 with a Chevy Colorado 2012.

I did some checking and your 2014 Toyota Prius V can be towed on a tow dolly like the Roadmaster kit part # RM-2050-1 that you referenced.
Your 2012 Chevy Colorado could have a towing capacity of 1,500-5,500 lbs depending on how it's equipped so you'll need to confirm that based on how your truck is optioned.
