I have the yakama overhaul truck rack I want to carry two hobie outbacks looking for recommendations on best saddle or pads

It sounds like you would like to carry 2 Hobie Mirage Outback Kayaks on your Yakima Overhaul bars. The Yakima Overhaul comes with crossbars that measure 68" long x 3" wide x 1-1/2" thick. From my research the Hobie Mirage Outbacks are 34" wide but you would want to measure your particular Hobie to be sure they are not too wide for the bars.
The best saddle style carrier for your Hobie Outbacks on the 68" long bars is the Yakima SweetRoll Kayak Carrier w/ Tie-Downs - Saddle Style part # Y04074 because the carrier itself takes up the least amount of space on the bars which you will need. They have integrated rollers on the back saddles so you can easily push the Hobies into place on the bars for the rear of the truck. They also come with tie-downs. You would need two sets to carry two. I recommend adding the lock cores part # Y07204 to protect your Hobies.
