The Thule Apex 2 Bike Carrier # TH9024XT that you referenced would be an excellent choice for a bike rack for your 2008 Toyota Avalon with a hitch with a 1-1/4 inch opening.
This rack features anti-sway cradles that prevent bikes from banging into each other while being transported, and an easily operated tilt feature to allow access to the rear of your 2008 Toyota Avalon.
I attached a review video for this product for you to view, as well as links for some helpful FAQ articles.
