The correct Roadmaster Crossbar-Style Base Plate Kit for your 2001 Jeep Grand Cherokee is part # 1419-7. The part # 1425-1 that you referenced actually only fits a 2004 Jeep Grand Cherokee. Attached is a picture of the finished product that a customer sent in that you can reference.
For a complete flat towing setup you will also need a tow bar, safety cables, vehicle tow bar wiring, a supplemental braking system, and possibly a high-low adapter. If you do not have all of these components just let me know and I can make some additional recommendations for you.
