All of the available trailer hitches for your 2015 Mini Countryman are Class I models with 1-1/4" receiver openings. Trailer hitch manufacturers usually try to match up a hitch's capacity to that of the vehicle it is designed to fit. This is most likely why there isn't a Class II or higher rated hitch available for your Mini Countryman, as the vehicle itself cannot handle the weight that a higher-class hitch would offer.
I recommend the Curt Trailer Hitch Receiver - Custom Fit - Class I - 1-1/4" # C11333. This hitch features a towing weight capacity of 2,000 pounds and a tongue weight limit of 200 pounds. You will still want to verify the vehicle's limits by checking your copy of the owner's manual. Hitches are rated for the level of difficulty to install using "Easy, Moderate, or Challenging." Curt rates this hitch as "Challenging" and says it will take professional installers 90/180 minutes to install. If you are not comfortable tackling this, you can have it installed at a local shop. I have attached the written installation instructions that you can check out as well.
For a trailer wiring harness, I recommend the Tekonsha ZCI Circuit Protected Wiring Harness # 119250KIT. This is a universal hardwire kit that will provide you with a 4-Way connector to power a trailer's basic signal lights without splicing into your vehicle's wiring. I have again attached the installation instructions that you can take a look at.
To tow a trailer, you will also need a ball mount and hitch ball. The Curt ball mount # C25540 is a nice option that features a 2-1/8 inch rise or a 2-3/4 inch drop. You just need to add a hitch ball like the 1-7/8 inch # 19256 or the 2 inch # 19258. I have attached a great article that explains how to choose the best ball mount for your towing setup if this particular unit does not have the ride or drop needed to tow your trailer level.
