I was not able to locate the wire color for the cold side of the brake light switch on your 2000 GMC Sierra 3500. Your best bet is to simply test the wires above the brake pedal to find the one that only receives power with the brake pedal depressed, and no power with any other function. This is really the best method even if you have a good idea as to the correct wire color, as vehicle manufacturers often change the color wiring they use at the factory.
If you are looking to install a brake controller like the Tekonsha Prodigy P2 # 90885, then there should actually be a factory plug beneath the dash of your Sierra that allows for a simple plug-and-play installation. I recommend checking to see if this plug is present on your truck. If so, you can simply use the Plug-In Adapter # 3025-P instead of having to splice into any wires. One end of the plug goes to the controller and the other end plugs right into the factory port on the truck.
I have attached a sample installation that you can use for reference so you can see where this plug would be found on your truck if present.
