Question:
One question I cant seem to answer is the proper ball mount and ball. I plan to purchase this hitch C13115. Is there a standard ball and/or ball mount needed when pulling a pop-up? Or is it truly specific to the actual trailer?

For a fixed ball mount you really do need to know the height difference between the top of the receiver opening on the hitch and the distance from the ground to the bottom of the coupler in order to get a ball mount with the right amount of rise or drop to tow the trailer level.
You can get around that by instead using an adjustable ball mount such as # TK5007. This ball mount offers up to an 9 inch rise or 10 inch drop. It is rated for 5,000 pounds gross trailer weight (so it will cover the capacity of hitch # C13115 for your 2017 Kia Sedona).
For a compatible 1-7/8 inch ball you can use # 19260, for a 2 inch ball # 40038, or a 2-5/16 inch ball # 63847. Or you could go with an interchangeable ball set that has all 3 sizes, # 900B.
