I spoke with my contact at SeaSucker regarding the Monkey Bars Roof Rack # 298-SX6000B you referenced, which is confirmed to fit your 2015 VW Beetle. He stated that the Monkey Bars will work well in the extremely cold conditions you described. They have many customers who use these bars for this type of application, whether during cold winters or for use with ski racks, etc, which will be taken up to high elevation, frigid environments.

The only difference when using the rack during cold weather like this will be the installation process. After using the bars in the cold and removing them, you will need to warm them up again to near room temperature before the rubber is pliable enough to make a solid seal to the mounting surface again. You will also just want to check for any moisture on the roof before installing the system, as ice might build up between the vacuum cups and roof surface.
