Looking to buy a set of rocktamers and want to know if there is the 1 inch clearance on the curt adjustable hitch, either the 2 or 2 1/2 inch model. I have a 2015 3500 Chevy single rear wheel pulling a 32’ travel trailer. I have 2 1/2 inches from center of pin to face of hitch. I see the curt hitches have 2 pin holes, can I run the hitch in the rearmost position?

Check out the picture of the Curt adjustable ball mount part # C45900 that you referenced. If you use the rear mounted pin hole you have 3.75 inches to the gusset. Rock Tamers like the part # ERT00108 require 1 inch of clearance on the shank. So since you have 2.5 inches from the pin hole to the opening of the hitch you'd have 1.25 inches left for clearance for the Rock Tamer with the Curt ball mount.
