Can this be attached to the pin box on the unit?

The K-Source Stick-On Backup Mirror # KSC088 is really meant to install on the smooth glass surface of a vehicle's rear window. The painted steel surface of a 5th wheel pin box might not be quite smooth enough to provide for safe installation.
You might be able to modify it for screw-on installation to your trailer's overhang but I would not recommend drilling mounting holes into your pin box until you confirm with the pin box maker that this will not void your warranty. It will probably be best to mount it to a trailer exterior surface rather than on the pin box.
Another option is a camera system like # RVS-83112-WIFI or one of the others shown on the linked page.
