Question:
will this fit with 2 fuel tanks?

It all depends on where and how the fuel tanks are mounted in your 2017 Ram 3500. If you take a look at the instructions I have linked for Curt trailer hitch # 14070 you can see it attaches to the bottom of the frame. If one of the tanks is in the same location then that would be an issue. But if the tanks are higher up than the bottoms of the frame rails then the hitch will likely fit.
Just as a reminder this hitch is designed for cab and chassis Ram trucks and not regular pickups. If you have a regular pickup let me know.
