Please help me understand what the adjustable hitch attaches to and what is the best method of attachment? The framework, etc. Is completely hidden by the underbelly insulation, except for two metal rails that run parallel a few feet apart. Is this what the hitch attaches to?

Frame-mounted RV hitches like # C13701 and the others shown on the linked page bolt or weld on to a 5th wheel trailer's main frame rails.
On some trailers there will be components such as protective underbody panels, tanks or other structures that block frame access. On such trailers it is best to check with the manufacturer (using the trailer's VIN) for guidance as to where best to install a hitch and what their recommended installation method is for that specific trailer. They should also be able to tell you how much weight the frame can handle.
Some of our RV hitches like Ultra-Fab # UF35-946403 must be welded on by a qualified professional welder but others can be either welded or bolted on. Keystone will be able to give you their best recommendation for your particular trailer.
