You are definitely doing the right thing by changing out passenger car tires and putting trailer tires on your trailer. Trailer tires have a sidewall that is a little more rigid and so they can handle the weight of trailers and their cargo much better than passenger car tires can.
I do have a recommendation for you, but we do not carry any trailer tires in the 205/60-15 or 205/65-15 size.
The trailer tire that we have closest to your 185-65-15 tire size is 205/75-15. A tire this size will be about 1 inch wider, and about 3 inches bigger in diameter than your current tires. You will want to do some measuring to ensure that they will fit properly.
I have linked our selection of tires and tires with wheels of this size for you to filter through. If you choose one with a wheel you will want to use the attached article to make sure that it has the same bolt pattern that you currently have.
Among the available selection I recommend going with the Westlake ST205/75R15 Radial Trailer Tire w/ 15" Silver Mod Wheel - 5 on 4-1/2 - Load Range D # LHAW121 which has a Load Range D (2,150 lbs at 65 psi), and a 75 mph speed rating, and the wheel that has a 5 on 4-1/2" bolt pattern. This tire comes with a 5-year warranty and the wheel has a 1-year warranty.
I have attached a review video for you to check out.

So, I only have about 2" clearance from the top of the tire to the fender without any load on the trailer. And, I'm not sure the current rims would handle 1" wider, but I see it can come with a rim.
