I have a empty tongue weight of 375 lbs. When trailer is loaded my exceed the 600 lb weight. So which load bars would be best fit, 600 lb or 800 lb.

Most weight distribution systems have a tongue weight capacity range that they will work with. If your tongue weight could exceed the 600 pound limit of Fastway system # FA92-00-0600 then you would want to go up to the next system which is # FA92-00-0800. It is rated for a minimum of 400 pounds tongue weight though. Less than that and the system will not be effective. But if the trailer is empty you likely would not even need to engage the spring bars.
To choose a weight distribution system you will need to go by the total tongue weight of the set up. This is calculated by taking the tongue weight of the trailer, when loaded and ready to tow, and adding to that the weight of anything loaded behind the rear axle of the tow vehicle. So it is possible that even with the trailer empty you could reach over 400 pounds tongue weight if you have some weight loaded behind the rear axle of the tow vehicle.
