I recommend the Reese Quick-Install Custom Base Rails and Outboard Installation Kit for 5th Wheel Trailer Hitches, Item # RP56005-53. This kit is confirmed to fit the 2000 Ford F-350. Because this is a custom kit, it cuts down on installation time by more than half when compared with universal kits. It also mounts to existing holes in your truck frame, minimizing the amount of drilling necessary.
I'm attaching two links for installation videos on vehicles similar to yours as well as the installation instructions if you'd like to check them out.
If you are in need of a hitch, I recommend the Reese M5 Fifth Wheel Trailer Hitch - Single Jaw, # RP30928 which has a weight capacity of 20,000 lbs.
If you are in need of trailer wiring, I recommend going with either the Curt 5th Wheel Wiring Harness 7-Pole, # C56000, which is confirmed to fit a 2000 F-350 with a factory 7-way.
