We do have 1-7/8 inch hitch balls available in the dimensions that you need of 1 inch diameter shank, and 3 inch shank length, but not in a stainless steel finish. For a hitch ball with those exact measurements, we have the Curt Hitch Ball, part # C40017, which has a chrome finish.
Another option that you may want to consider is the Convert-A-Ball Ball, part # 105LB, which features an interchangeable hitch ball. Part # 105LB, has a Nickel finish which is also corrosion resistant finish. The Convert-A-Ball hitch ball has 1 inch diameter shank, and a 3 inch shank length.
