The receiver tube on Curt Trailer Hitch, # C13001, will be under the rear fascia (bumper) when installed on your 2007 Suzuki Grand Vitara, so it will not interference with the license plate. I have included a link to the installation details for reference.
To complete your towing set up, the recommended ball mount is # C45010, and the recommended pin and clip is # PC3. You can use ball # 19260 (1-7/8 inch diameter), # 19247 (2 inch diameter), or # 63847 (2-5/16 inch diameter). For trailer wiring, you would need the Curt Wiring Harness with 4 Pole Trailer Connector, # 56002. I have included a link to the installation details for reference.
