When it comes to any vehicle capability the owner's manual is the best place to confirm what any specific auto can and cannot do. This includes towing a trailer and being towed on a dolly or in a flat-towing setup. Page 332 of the online edition of the vehicle's owner's manual indicates that the 2WD version CANNOT be flat towed. The 4WD version CAN be flat towed IF it has the 2-speed transfer case that includes Neutral and Four-Wheel-Drive-Low settings. The preparation steps required are detailed on this and the following pages of the manual. Page 334 indicates the 2WD version can be dolly towed with rear wheels off the ground.
Please refer to the linked article on flat towing for details on each of the required items. These include a tow bar, safety cables, a wiring/lighting kit, base plates and a braking system for the towed Escalade as well as a high/low hitch adapter.
