I confirmed with my contact at Curt Manufacturing that their 2-inch Class III hitch part # 13138 is a fit on your 2000 Ford Ranger Stepside. The linked installation video illustrates the mounting process on a 1999 Ranger. Drilling is required.
The recommended ball mount to use with it is part # C45030 and with it you can use 2-inch hitch ball # 63845. For a wiring harness use part # 118344 which is a simple plug-in installation at the truck's taillights.
