Question:
I would like to use a hitch mounted bike rack while hauling my pop up camper. I have a center mounted tongue jack. I am curious how much my turning radius will be reduced with 2 bikes in between the truck and trailer?

With 2 bikes in between the truck and the trailer the turning radius will not be reduced all that much but every situation is different so the only way to know for sure is to try it.
Another option, instead of using the multipurpose ball mount # D210, is to use the Bike Bunk, # CC-275, which mounts on A-Frame trailers and can hold a bike rack. The bike rack will have to be rated for use on a trailer though. For that I recommend the Swagman Original, # S64152-2. I have linked videos on the Bike Bunk and this rack for you.
And a third option is to use a towing bike rack. For that I recommend a long ball mount, # EA40, which is 14-5/8 inches from the center of the hitch pin hole to the center of the ball hole. The longer ball mount will help with turning clearances. Then you could use a towing bike rack such as # C18013 for a hanging style. I have linked videos on this bike rack as well.
