It sounds like the load on the winch you have on your Polaris ATV is creating too much power draw for the electrical system to handle causing the engine to die. It might not die if you keep the RPMs up enough to handle the increased load. You may also need to look into a higher capacity battery and/or generator/alternator to handle the higher load.
The Superwinch LT3000ATV winch # SW1130220 can draw up to 180 amps at full load. If the electrical system cannot handle that load or the battery is weak then it could stall out the motor.
