Good news, I can help you pick out a 1-1/4 bike rack for your 4 bikes.
I would recommend a hitch mounted hanging bike rack like Yakima RidgeBack # Y02458 instead of the platform style racks you were looking at. I chose this Yakima rack because of the weight capacity and arm length to accommodate your 4 bikes. Because you have fat bike tires, we know they will take up more wheel space than regular bikes. On this rack you can adjust the cradles distances along the bar to accommodate for the wide space the tires will take up. Next, I chose the RidgeBack because of its high weight capacity of 150lbs. With your two stated ebikes weighing 55lbs each, that will leave 20lbs of capacity per cruiser bike left.
It is important to note that you may need the use of an adapter bar # Y02531 for all your bikes to mount to the cradles properly. I have noticed that Cruisers typically have a alternative frame which requires the adapter bar for mounting.
Since you have a Class II hitch with an 1-1/4 receiver opening, you are going to be limited by the tongue weight of the hitch and ultimately the vehicle itself, you will want to make sure that your owners manual and the hitch can accommodate this much weight before transporting these bikes.
I have linked a few videos on the products listed above for your convenience. If you would like to tell me what vehicle you have and what your hitch is rated for I could help you look into the weight capacity further.
