Question:
Hi there, I have a question about a hitch for my 2015 Honda Odyssey. If I only intend to carry bikes on a hitch, I dont need wiring or anything do I? I will need a 5 bike carrier so it my understanding that I need a class III hitch? Is this correct?

For a 5-bike rack, you'll want to use a 2 inch Class III trailer hitch like the # 75270 Draw-Tite you mentioned. Since you won't be pulling a trailer, you won't need a trailer wiring harness, just the hitch and a bike rack.
The Hollywood Racks Road Runner # HR520 would work well on your Odyssey. Please be aware that getting 5 bikes on a rack can be a tight squeeze, you'll want to alternate the direction of each bike.
I've linked you to a demonstration video for the Road Runner bike rack.
