I struggle to get these off. What is the best way. If I break one, I see that I can buy more from you.

The Snap-on Reflector Ring # A78RXB that you referenced attaches at the top, bottom, left, and right of the mounting flange of the light assembly with clips that slip over the flange when pressed on.
To remove the ring you basically would want to grab one side of the ring and gently pry up on the ring till it releases from the mounting flange. If it does not want to remove this way you can use a thin slot screwdriver and slide it down into the slots on the sides of the light. This will allow you to push on the hooks of the ring so that they will release from the light. See picture to see where to insert the screwdriver.
