My leaf springs are 2 inches. This is exactly the style of hanger I want, but nobody sells it in 2 inch. Would it be possible to spread this hanger open to accommodate a 2 inch spring?

The CE Smith front hanger bracket for trailer slipper springs # CE14016G you referenced cannot be altered. Once steel bends it will continue bending over time and could cause a serious problem.
Hangers for 2-inch wide springs should be welded to the frame, hence the reason bolt-on hangers are not made.
The closest match hanger for your 2-inch wide slipper springs is the Redline center hanger # 29-1. It is designed for trailers with 3,500 pounds to 9,000 pound axles and is 3-1/2 inches tall.
