No, the tow hooks come off no matter what brand of base plate you use. This is extremely common amongst all trucks with flat towing set ups. That's a solid anchor point and attaching a base plate there hides it extremely well. You're going to want to stay away from the AT4X if you goal is to flat tow a 2023 GMC Canyon. The good news is the Trailer Valet system part # TV68FR uses a universal mounting bracket design, so you don’t need to worry about matching up specific bolt hole spacing on those factory plates. Assuming that when you tested the resistance of the brakes you were testing the two wires on each magnet and getting 2.0 and 2.8 ohms the magnets on your trailer are not working correctly and will need to be replaced.
For 7" brakes you should get 3.8-4.0 ohms, and for 10-12" brakes you should have 3.0-3.8 ohms.
If the brake shoes themselves are good you can replace just the magnet using 7" # AKBRKR-M7, 10" # AKBRKR-M10, or 12" # AKBRKR-M12.

The triangle on the Blue Ox Patriot # BLU37TR remote controller will fill in as you start to brake which is an indication of how much braking force the Patriot is applying to the brake pedal on your 2021 GMC Canyon. Hey William, it looks like you're asking about the Tekonsha Prodigy P3 Trailer Brake Controller # 90195. This is a proportional brake controller, so basically how it works is the brake controller will activate the trailer brakes with the same intensity and at the same time as the tow vehicle.
