Hi Mike,
You could install the Fogatti InstaCool Ultra Air Conditioner part # FG72FR on the roof of a Mercedes-Benz Sprinter. However, due to the size and weight of the air conditioner, the roof will need structural reinforcement around the cutout to support it. You'll also be cutting a 14 1/4" x 14 1/4" hole into the roof, and because sprinter van roofs are corrugated and slightly curved, you'll need to use some sort of adapter or spacer that fits to the roof's ribbing to fill those gaps, so water doesn't get in. The Fogatti InstaCool part # FG72FR is also only the air conditioner unit, you'll need a whole kit with the air distribution box and remote for it to work like part # FG94VR. The Fogatti InstaCool Ultra requires both a 115V AC (for the compressor/heating element) and 12V DC power connection (for the control board, display, and remote module) in order to function so your van needs to have both.
Honestly, the easiest thing would be to install a Velit 2000R AC part # VE77QV because it only requires a 12V connection to run and is much smaller than the Fogatti so there will be more space on your van's roof. You will still need to reinforce the roof and use an adapter to prevent any water from getting in.
Will you have shore power when you're out camping with your van, or do you want to be totally off grid?
