The working load limit for one unit is listed as 7000 lb. Am I correct in assuming that a pair of these units one for each safety chain will provide working load limit of 14000 lb or at least 10000 lb?

Yes, that is correct Larry. Using two of the Brophy Figure Eight Coupling Link item # BR98MJ on separate safety chains will give you a 14,000 lbs working load limit. You'll easily have enough capacity for something that weighs 10,000 lbs.
