Yes, Chris. You can use leveling blocks under RVpaws jack pads when you need extra height or want to reduce how far the jack ram has to extend. That can actually help keep the setup more stable, since less ram extension usually means less side-to-side movement.
Just make sure the blocks are on a firm, stable surface and that the foot is landing squarely on the block, not near the edge. I'd also look into the SnapPads # SP74FR which will be a safe way to add about 1" under the jack foot and also add more traction from the rubber. Where do you usually camp - gravel, asphalt, or softer sites that need extra height?
