Hey David, thanks for the information and welcome back! The best cover for UV protection is the Classic Accessories ProTop4 RV Cover for Class B Camper Vans item # CA22DY.

The ProTop4 RV Cover item # CA22DY uses a thick, multi-layer top panel that is designed for maximum UV resistance. It specifically features a heavy-duty material on top that deflects harsh sun rays. This will prevent your paint fading while also protecting the roof from any sand or debris blowing around. The breathable sides will also allow what moisture gets trapped to escape.

The ProTop4 RV Cover item # CA22DY is designed for trailer's up to 23' long so it will fit your 2021 Air Stream Interstate 19 and it's spare tire perfectly. The included straps will allow you to secure any excess material so it doesn't blow around. The extra 2ish feet in length of the cover is also going to help when you're installing it.

What's the longest stretch of time you typically store your motorhome?

Longest stretch will be about 6-8 weeks if that makes a difference

@David It doesn't matter as far as the cover recommendation goes. I was just curious. I used to live north of Palm Springs and my paint and clear coat took a beating when I was gone for 7 months and my truck was just sitting outside.
