It is not necessary to have the hubs turned on your fifth-wheel trailer brakes unless there is a problem that would require turning. If the surface of the hub looks to be in good shape with no grooves or discoloration from overheating then I would install the new brakes or complete assemblies and adjust the brakes (see link).

When adjusting the brakes if you notice that the brakes start grabbing significantly on one portion of the hub and are still not touching other parts of the hub, when spinning the wheel, then the hub may be out of round enough that it needs to be turned. No hub is perfectly round, and all hubs will do this somewhat, but if you get to where one area is grabbing so much that it is hard to turn the wheel and another area is still not touching then the hub will need turning. You should be able to turn the wheel pretty easily with one hand. Your brakes will work much better when the hubs are true and round. If there is any doubt take the hubs to a qualified mechanic and have them checked.

You should also check the brake magnet mating surface in the hub for wear, grooves or discoloration and if there is a problem have this surface turned, or replace the hub.
