Question:
Does the aluminum cover need to stay installed, or can I remove it? I have about 6inch clearance above the unit to the ceiling

The front aluminum cover on the Greystone Built-In RV Microwave # 324-000105 can be removed. This cover is generally more of a decorative part. Do be sure to secure the microwave as you will not have the cover there to prevent the unit from sliding off the shelf.

I was talking about the large cover on the top left side of the unit being held with 4 screws covering the units vents.
