Matthew, for a hitch I recommend going with the Draw-Tite Max-Frame Trailer Hitch Receiver # 75561. This hitch has a nice 3,500 lb capacity, is custom to your vehicle so it'll bolt up requiring no drilling or welding, and has a class III 2" receiver opening.
For a wiring harness it looks like your vehicle has the 4 cylinder engine, so I'd recommend going with the Tekonsha Tail Light Converter with 4-Way Flat Trailer Connector and Install Kit # 119178KIT.

Hey Matthew, how did the Draw-Tite hitch and Tekonsha wiring kit work out on your Kia Sportage? Your update could make it easier for the next person setting up a similar tow setup.
