Hi Brad,
Yes, the Swift Hitch Digital Wireless Hitch Alignment Camera and Monitor # SH02Digital can be used to monitor the trailer while driving on the interstate. It comes with a suction cup and magnetic mount, but I would only use the magnetic mount when driving at highway speeds. The camera only has a 7 hour battery life so it won't be the best option compared to a wired third brake light camera, tailgate camera, or license plate camera. If you can tell me the year/make/model of your tow vehicle I'd be happy to look into some other options for you so you can get what's going to better suit your needs.
