Can I convert a magic tilt trailer for as 21 foot ls Carolina Skiff to roller bunks? If so what would I need to do this?

I do not see why you would not be able to convert your Magic Tilt trailer to roller bunks. Typically you want the bunks to be at least 50% of the length of your boat, but I recommend using the same length as the current bunks from the manufacturer or even slightly longer if you have the space.
To make the transition to roller bunks, you will need the roller bunks and the bunk brackets.
The Boat Trailer Deluxe Roller Bunk # DL21740 will provide a 4' roller bunk section. You likely need 3 of these sections (each side, 6 total) for your boat size. The Boat Trailer Roller Bunk Bracket # DL21742 will allow you to properly mount the roller bunks. They are sold individually and a total of 4 are needed for each pair of roller bunks (so you will need a total of 12).
