i have a gp-pwm-30-ul with one 100 watt panel. how many more watts can i add to this unit?

The Go Power Solar Controller part GP-PWM-30-UL is rated for up to 600 watts of solar so if you only have one 100 watt panel now, you can add up to five more of these before you max out the solar controller. The Go Power Retreat Expansion Kit part # 34272634 is an excellent option for this and what I recommend using. It has a 100 watt rating and everything you need for installation.
