Question:
I transport my snowmobiles on an open utility trailer. Will this cover be a good choice for that? Im concerned that the wind will damage the cover or pull it off while on the highway.

The Classic Accessories Snowmobile Cover - Large by SledGear # 052963715378 does a great job for storage applications but it wasn't designed to handle the high winds you'll face on a highway so I definitely don't recommend using it in that fashion.
For your application I recommend using more of a traditional covering like the 10' x 14' Erickson Heavy-Duty Silver Tarp # EM57022. This is designed to help protect cargo in trailers so it can take a beating from the wind on the highway as well as rain. You will need to secure this tarp with tie-downs # EM31353 or bungee cords # EM06623 depending on whichever you prefer.
If you wanted to use the Classic Accessories cover and then put the tarp on top of that then I think that would be acceptable, but I would double check on the snowmobile cover from time to time just to make sure the wind isn't getting under it and working it off the snowmobile.
Attached is a review video for you to check out.
