Will replacing this pump with one that has a higher psi cause my lines to leak or blow out?

Going with a higher pressure rated water pump like the HydroMax RV Fresh Water Pump part # P25201 that you referenced would not cause any issues with your water lines like you mentioned. They would not leak or blow out. You'd just have a little more water pressure than what you have now. 55 psi like what this produces is a very common pressure and would not be too much for your RV.
