I wasn't able to find anywhere in the owners manual for your 2011 Ford E-350 Van that the reverse detection system is deactivated when connected to a trailer. The Hopkins Plug-In Simple Wiring Harness # HM11140665 that you found is designed to replace a damaged connector on your Van that came with the factory 4-way.
If your Van did not include a factory 4-way you will need the T-One Vehicle Wiring Harness # 118551. This will allow you to connect to the tail lights on your Van to gain the lighting functions for the connector. This kit will not turn off the reverse sensors when connected to a trailer.
