I have accidentally ordered a 1 1/4 inch hitch bike rack and wondered if there was an adapter I can use for my 2 inch hitch?

Absolutely there is!
What you'll need is the MaxxTow Trailer Hitch Receiver Adapter # MT70033.
This adapter will slip into your 2" trailer hitch receiver and will allow you to use your 1-1/4" bike rack.
Please note that using an adapter will reduce your hitches overall capacity by 50 percent.
