I only plan to use this hitch for one 60lb fat tire 4” ebike. I will remove the extra tire cradles. I have a 2008 Toyota Prius and a RadRover 6 Plus.

I have another option for you, but the Curt 2 Bike Platform Rack for Fat Bikes # C18085-FB has a weight capacity of 45 lbs. per bike and unfortunately only using one bike doesn't allow you to use the other sides weight capacity towards the side your bike is on because the cradles are still only rated at 45 lbs.
I recommend using the RockyMounts MonoRail Solo Bike Rack # RKY10007 which will hold a bike that weights up to 60 lbs. and with a tire up to 5" wide. It will also work with a class 1, 2 or 3 hitch so it will be compatible with your bike and the hitch on your Prius.
