Will these allow me to continue to use the power folding closing function of my current mirrors?

While you can still fold the K-Source Custom Extendable Towing Mirrors - Electric/Heat with LED Signal # KS62075-76G, it would have to be manually as they don't allow power folding.

There isn't a towing mirror with the power folding functionality, but the mirrors do have powered mirror adjustment, as well as heat and the LED turn signals. So if you're okay with having to manually fold the mirrors on your 2007 GMC Sierra Classic, by far the best option for towing mirrors on your truck are the K-Source # KS62075-76G.

Replacement mirrors like these are much more convenient than snap-on or strap-on towing mirrors because you don't have to constantly take them on and off, and there won't be any vibration like with those mirrors, so you can always have a perfectly clear view of what's behind you.
