after drilling the 1/2inch holes, why not just use self tapping bolts?

The frame is hollow so there is nothing for self-tapping hardware to grip. Also, frame steel is generally very strong and can even require a special drill bit (rotabroach) so self-tapping hardware would have an even harder time installing. I have linked the installation instructions.
If you plan on doing some towing then the correct ball mount is # C45522. For a 1-7/8 inch ball use # 19256 and for a 2 inch use # 19258. For trailer wiring use # 118450. Then you would also need a Pin and Clip # F-4. I have linked a video for the wiring for you.
