Question:
Are these easy on and off and will they scratch the painted part of mirror doing this or due to movement while driving?

CIPA custom towing mirror # 10901 should leave no marks or holes on your 2012 Chevrolet Avalanche if properly installed. There is a wedge that goes in between the mirror housing and the towing mirror. This wedge is lined with felt to protect the housing as well as to hold the mirror in place.
There is a knob on the back that you will tighten to secure the mirror to the housing so it is an easy on/off application. Take a look at the video I have linked that shows how the mirror installs. The matching passenger side mirror is # 10902.
