The clearance between the bottom of a 5th wheel overhang and the truck bed is going to depend on several factors including the ride height of the truck, the height setting on the pin box on the trailer and the height setting on the 5th wheel hitch. What you are looking for when connected is a distance of 5 to 6 inches between the bottom of the trailer overhang and the top of the truck bed.
Fifth wheel trailer hitches and most 5th wheel trailers are height adjustable to varying degrees so that you can safely tow the trailer level without interference between the truck and trailer.
If you mean how much clearance there will be from the back of the truck to the front of the trailer where it might contact the truck, that depends on a lot of factors as well including where the hitch is located, the extension of the pin box and design of the trailer.
