The hardware needed will depend on what surface you'll be mounting the e track to and how thick it is.
We do offer 1 x 1-1/4 inch hardware for installing e track like the # 3371903055 that you'd looked at to wooden sheathing as part # SL49FR. You'll want to ensure that the thickness of the sheathing your attaching the e track to is 1 inch or more.
