How do you mount a tray that does not slide both ways?For example, 36 x 48? Since they do not come apart?

The MORryde sliding tray that slides 1 way that is 36 x 48 inch is the part # MR76FR. Basically the side brackets attach to the floor of the compartment. You can have the tray slid all the way out so that you can access the mounting brackets. In the review video link that I attached you can see more info on how it function and installs as well.
