can I assume the red is my + and white is my negative going to use as a new quick detach on a machine HM47965

You can use either wire for your positive or negative on the Hopkins 2-Pole Flat Wiring Extension - 12" Long # HM47965. What really matters is just making sure you match up the connectors properly so that the male and female connectors will attach to the matching wires together if you split cut one connector off to attach to an item that has a 2-pole connector already on it. You can see an example of this in the attached video where David goes through wiring up a trailer light.
