Im considering getting the Stealth Hitch for a 2020 BMW X1. Id like to attach a bike rack which holds either 2 or 4 bikes, and ideally one which folds out so I dont need to detach the entire rack to get into the trunk. Id also like to be able to attach some kind of cargo carrier which doesnt require the whole tow kit. Do you have any product recommendations for the bike rack or cargo carrier? And anything else I should be aware of, e.g. whether the rear camera will be blocked by the hitch or the accessories ?

Since your plan is to carry a bike rack with the Stealth hitch for your 2020 BMW X1 you wouldn't need the version that includes the ball mount and wiring part # SH55VR and would instead want the part # SH77VR.
So for a bike rack that can pivot out and away from the rear of the vehicle with bikes loaded to give you complete rear cargo area access the Apex Swing part # TH9027XT would be a great option.
Then for a hitch cargo carrier the part # 63153 would be a great option as well.
