I have a 2005 jeep liberty with a spare tire size 225/75R16. What size cover do I need?

Your 225/75R16 spare tire measures about 29.3" in diameter. For that size tire the Rampage Spare Tire Cover for Jeep part # RA773215 that you looked at would be my choice.
The next size down part # RA772901 is rated for up to a 29" tire and I wouldn't want to stretch it that tight and damage the seams of the cover. It would likely fit however if you're looking for a very snug type look. Also this does not come in the black denim you looked and just the gloss black vinyl.
